Slow-Cooker Mac & Cheese!

If you are like me you have children in your life who love mac & cheese! I have a tried-and-true recipe for making mac & cheese, but it does require a fair amount of standing and stirring . . . not something I am always able to do (I have MS), so when I found a recipe for making mac & cheese in a slow cooker, well I just had to share it with you!

Trisha's Crock pot Macaroni & Cheese (Trisha Yearwood)
8 - ounces elbow macaroni, cooked
1- 12 ounce can evaporated milk
1 1/2 - cups whole milk
2 - large eggs, beaten
1/4 - cup (1/2 stick) butter, melted
1 - teaspoon salt
Dash of pepper
2 - 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups)
Dash of paprika

In a 4 quart crock pot sprayed with cooking spray, mix the macaroni, milk, eggs, butter, salt, pepper, and all but 1/2 cup of the grated cheese. Add the reserved cheese on top of the mixture and then sprinkle with paprika. Cook on low for two to three hours - keep an eye on your cooker so you don't over-cook. Turn off the crock pot, stir and serve. (Note: If you don't have a crock pot , grease a 9 x 13 inch pan with butter, add the mixture and bake at 350 degrees for 50 minutes.)

Well, I will be trying this - possibly this Sunday. If it turns out, I can see this as something I will fix often! Have you ever tried slow-cooker Mac & Cheese?
