grandma's cookbook - Butterscotch Chocolate Chip Cake

Butterscotch Chocolate Chip CakeI am so in the mood for cake! But, I am committed - yes, committed, to losing at least 20 pounds by March 1st . . . I have to fly to Ashville, NC in March and those plane seats are soooo small! Hence, my commitment to losing at least 20 pounds!

But, I am sooo in the mood for cake!!!! :-(

As I browsed on Pinterest this morning I found a recipe I will likely make . . . and limit myself to just five bites of it . . . I'll have to eat really slowly and savor each bite!

At any rate, the recipe is for a Butterscotch Chocolate Chip Cake . . . can you see why I'll have to eat those five bites very slowly??!!!

You'll find the recipe at this link - it looks pretty straightforward, although since I'll make it when my family is here to eat it . . . after all, I do want to lose at least 20 pounds and limiting myself to five bites when a whole cake is sitting on my counter beckoning me . . . well . . . let's just say it is most likely there would by a LOT of times when I limited myself to just five bites!!!! Not really productive when I want to make progress on losing those 20 pounds!!!

So, since I'll make it when family is here, and loved family members are allergic to milk, I think I'll substitute almond milk for the whole milk called for in the  cake recipe and I'll make frosting using pudding - again using the almond milk in place of regular cow's milk. But, all-in-all, I think this will be a tasty cake and I'm definitely looking forward to my five bites which I'll savor very slowly!
