grandma's cookbook - Dairy-Free & Delicious Pancakes

Josiah and Caleb spent the night last night so this morning Josiah thought it would be great fun to have a pancake-eating contest! There was some "serious" "trash-talking" going on here between Josiah and Poppa about who would eat the most!

I was going to use my pancake mix for the panckaes, but it has milk in it and Caleb has a dairy sensitivity, so I pulled out my trusty Better Homes and Gardens cookbook and found a recipe which just needed a bit of tweaking to make it work. The pancakes were very tasty . . . Josiah "won" because after he ate four he said the contest was over! Then he said poppa ate the most, but he didn't realize the contest was over! Does that make it a tie? At any rate, we had fun and a tasty breakfast, too!

I'm happy to share this simple recipe with you for tasty dairy-free pancakes . . . 
  • 1 3/4 cup flour
  • 1 Tablespoon baking powder
  • 3 Tablespoons sugar
  • 1 teaspoon salt
  • 1 egg
  • 1 1/2 cups almond milk
  • 3 Tablespoons oil
Mix the dry ingredients and then add remaining ingredients and mix until moist - do not over mix - your batter should be lumpy! Allow to sit a few minutes and drop by the spoonful to a hot griddle. Enjoy!
