grandma's cookbook - Lemonade Ice Cream Pie

I've been debating for a few days what I want to fix for dessert for our Resurrection Sunday dinner . . . I've known for a couple weeks I'm fixing a ham, mashed potatoes, corn on the cob, roasted asparagus and homemade bread, but had not decided on a dessert. However; today I decided . . . Lemonade Ice Cream Pie! This pie is so tasty - and simple to make . . . I think I'll have Josiah and Caleb make it and thought you might like the recipe as well!

You just need four ingredients . . .
  • One half can of frozen lemonade concentrate
  • 1/4 gallon of vanilla ice cream - softened a bit
  • Graham cracker pie crust
  • Whipped cream
So, how do you prepare this pie . . .
  • Combine 1/4 gallon of ice cream with thawed lemonade concentrate and mix with mixer to combine
  • Pour into pie crust and freeze
When you serve, top with whipped cream and enjoy!

What are you serving for your Resurrection Sunday Dinner and Dessert?

  1. Sounds yummy and easy....I'm also fixing ham, potatoes, green beans with bacon, and a couple salads. My daughter-in-law is bringing dessert so it will be a surprise (she does make a wonderful coconut cream pie...but she isn't telling.)

  2. This brings back mom used to make this pie when we were kids. Thanks for sharing the recipe!
