grandma's cookbook - Lemonade Ice Cream Pie

Each year I try to be sure to share this simple, yet oh-so-tasty recipe for Lemonade Ice Cream Pie. If you have read this recipe in previous years, but not yet tried it, please do - you, and those who enjoy it with you, will be so glad you did. If you are new to grandma's cookie jar - enjoy - this pie is super easy to make, extremely tasty and enjoyable!

Ingredients -
  • 1/2 gallon of vanilla ice cream - makes two pies
  • 2 small cans of frozen lemonade - the smallest cans you can find
  • 2 graham cracker pie crusts
  • yellow food coloring - optional
  • 2 pints of whipping cream
Directions -
  • Allow ice cream to soften and thaw lemonade - do NOT add water to the lemonade, you will use it as a concentrate
  • Mix whipping cream in a large bowl until fluffy
  • Add softened ice cream and mix together
  • Add lemonade as concentrate - do NOT add water to the lemonade
  • Add a few drops of yellow food coloring
  • Spoon into pie crusts and freeze until ready to serve
  • Enjoy:^)
This is a super easy pie to make - be sure to allow your grandchildren to help with the adding of ingredients, mixing, scooping into the pie crusts and of course with the "tasting"! :^) I love this pie in the summer as it is cool, slightly tart and involves no baking, cooking or heating in any way! You could also make this pie substituting frozen limeade for the lemonade and using green food coloring in place of the yellow food coloring.

As you make this pie with your grandchildren talk with them about the ingredients and how God created cows and lemon trees and aren't we so very glad He did! Lead them in thanking God for making things which are so enjoyable to eat and then thank God for each of your grandchildren as they are ever so much more enjoyable than any pie . . . even yummie, easy-to-make Lemonade Ice Cream Pie! :^)
