Nearly every Friday or Saturday my grandsons come over to spend the night! Saturday/Sunday morning I fix breakfast . . . they usually choose eggs and bacon, but today is Blueberry Pancake Day, so maybe this weekend I'll make pancakes - to celebrate a couple days late. But, you could celebrate today if you are able to spend time with the children you love - and pancakes are wonderful for any meal!
- 1 1/2 cups flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 Tablespoons sugar
- 1 1/4 cups milk
- 1 egg
- 3 T melted butter - or regular vegetable oil
- 1/2 cup blueberries
Mix dry ingredients together. Combine milk, egg, and butter/oil; mix a bit. Add milk and berries to dry ingredients and stir until moistened. Cook on a lightly oiled griddle until browned on both sides. Top with peanut butter or syrup and enjoy!
