grandma's cookbook . . . Lemony Lemon Bread!

I really enjoy a nice slice of lemony, lemon bread now and then . . . this recipe is easy and quick and sure to delight!

Ingredients -

  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 cup sugar
  • peel of one lemon - grated
  • 1 tablespoon baking powder
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 cup melted butter
  • approximately 1/4 cup lemon juice
  • 1/2 teaspoon vanilla
Directions -
  • preheat oven to 350 degrees
  • mix dry ingredients and lemon peel 
  • in a separate bowl, beat eggs and add milk, butter, lemon juice and vanilla
  • mix with dry ingredients until just moistened
  • pour into greased pans and bake for 45 to 50 minutes - until toothpick comes out clean
  • allow to cool 10 minutes in pan, turn out cool and enjoy!
  • if you want to try a different taste, substitute orange peel and juice or lime peel and juice for the lemon peel and juice :^)
Double your recipe and make two loafs - one to keep and one to share with an elderly neighbor or someone you know who could stand to have their day brightened! Involve your grandchildren in making the bread and in taking the loaf to your neighbor. While the bread bakes and cools have them decorate cards to put with the bread . . . this is a wonderful way to help them develop a heart for others!
