Apple Pie Pancakes from 365 30-minute meals!

I recently had the opportunity to review 365 30-minute meals from Better Homes & Gardens/Wiley and while it is filled with amazing recipes, I thought the one for Apple Pie Pancakes is one you all might enjoy . . . maybe it could be the recipe you use to begin a new family Christmas morning tradition!

Ingredients -
  • 1 1/2 cups flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon apple pie spice or cinnamon
  • 1/4 teaspoon salt
  • 2 lightly beaten eggs
  • 1 cup apple juice or 1/2 cup apple juice and 1/2 cup milk
  • 3 tablespoons melted butter
  • 2 teaspoons vanilla
  • 1/2 cup sliced apples
Directions -
  • mix together flour, sugar, baking powder, spice and salt
  • combine eggs, juice, butter and vanilla and add all at once to dry ingredients - stir until just moistened. (should be lumpy) add in apples
  • pour about 1/4 cup batter onto lightly greased, hot griddle and cook 1 - 2 minutes per side
  • top with syrup and enjoy!
