grandma's cookbook - Roasted Seasoned Potato Cubes

Crispy Potato Cubes RecipeI stumbled across a delicious recipe for roasted potato cubes the other day and thought I'd share it with you! This simple and tasty recipe makes the perfect potato dish for practically any meal . . .

Ingredients -

  • five medium potatoes cut into 1-inch cubes - I used a mix of Yukon Gold and Red Potatoes and left the skin on. You could also use sweet potatoes for an additional healthy touch!
  • 1/2 teaspoon salt
  • 1/2 teaspoon thyme
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon rosemary
  • 1/8 teaspoon pepper
  • 1/4 cup butter - you could use olive oil if you really wanted to, but the butter does add a delicious touch!
  • 1 clove minced garlic
Directions -

  • put butter in a foil-lined pan and place in a heated oven so the butter melts
  • combine spices, salt and pepper in a large zippy bag
  • add potato cubes to bag and shake to cover potatoes in spices
  • remove pans with melted butter and add garlic then stir
  • add potatoes and spread out so they are in a single layer
  • cover with foil and bake for 20 minutes
  • uncover, stir and bake for 20 additional minutes until potatoes are tender and light brown
  • enjoy!
This is a fun recipe to make with your grandchildren as they can help measure spices and will have fun shaking the potatoes in the bag with the spices . . . just be SURE the zippy is securely sealed before you begin shaking or you'll end up with potatoes all over the place!
