National Soup Day . . . Cheesy, Potato Soup!

My dear friend, Maralee McKee, the Manners Mentor, just posted on her facebook, today is National Soup Day! Thank you Maralee for this info . . . since on Wednesdays I tend to share a recipe on this blog, I thought I'd go ahead and share my favorite recipe for Cheesy Potato Soup!



Ingredients -

  • Red potatoes and Yukon Gold potatoes - wash and cut into cubes, leave the skin on as it will help give the soup some color
  • ham - cut into cubes
  • Velveeta Cheese
  • Evaporated milk
  • pepper
Directions -
  • cook potato cubes in enough water to just cover them until they are tender
  • add evaporated milk - I try to double the liquid
  • add ham
  • slice cheese and add until you have the taste you are looking for - some people like more and others like less cheese
  • pepper to taste
  • add a couple tablespoons of butter
  • warm over a low heat until cheese is melted - stir from time to time
  • you could add some instant potato flakes to thicken the soup if you like
  • add garlic, onion and parsley to taste if you like
Bake some bread in your bread machine and enjoy! As I look outside, it is snowing, the sky is grey, if ever there was the perfect day for soup . . . this would absolutely have to be it!

  2. I didn't even know the 18th was National Soup Day and we had Pizza soup for dinner that night. What luck!
