grandma's Christmas Cookie Recipe Contest - Ricotta Cookies by Natalie

I'm very happy to share the seventh recipe in my Christmas Cookie Recipe Contest - Ricotta Cookies by Natalie Rego! Natalie says these are her favorite cookies and she can't wait for the Holidays! Thank you Natalie for sharing with us - voting will begin on Thursday, November 15, 2012!

Ingredients - 

2 c. sugar
1/2 lb. butter
1 lb. ricotta cheese
4 c. flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla
3 eggs

1 lb. confectioners' sugar
1/2 c. butter
1/8 teaspoon salt
1 teaspoon vanilla
3 or 4 Tablespoon milk

Directions -

Cream sugar and butter in stand mixer. Add eggs and vanilla. Beat until creamy. Sift flour, baking soda and salt in separate bowl. Add flour mixture gradually and add ricotta. Use a cookie scoop to drop rounded balls onto cookie sheet lined with parchment paper. Bake 15 minutes at 350 degrees.

Icing: Cream 1/3 of the sugar with butter. Add salt and blend. Add 2 Tablespoons milk and remaining sugar to mixture. Gradually stir in remaining ingredients until a thick, stiff frosting forms. Wait to add frosting until cookies are completely cool, otherwise it will melt and drip off. Add food coloring or sprinkles for a festive touch.


  1. Wow! Ricotta cheese. Never would have thought to use that ingredient.

  2. Ricotta cookies are my absolute favorite!!!!

  3. Made these and they were amazing! More like a cake cookie, very soft. Yum!
