One thing I knew I had to find a recipe for was chocolate candy. Caleb - and Jackie - both are great "fans" of chocolate, but chocolate typically has milk in it which meant they could not have it. Sadness all around :-( But, happily, I looked on Pinterest and found a site with recipes for chocolate candy - all dairy-free!!! WooHoo!!! Hooray!!!
I decided to try the simple Sno-Caps, but "tweaked" the recipe to include peanutbutter and exclude the sprinkles on the top. You'll find the recipe - and recipes for several additional dairy-free chocolate candies - at this link. My "tweaked" recipe is below . . .
- 5 T cocoa powder
- 4 T coconut oil, melted
- 4 T powdered sugar
- 3 T peanutbutter, melted
- 1 tsp honey
- dash of vanilla
Directions -
- Melt coconut oil and peanut butter
- Mix all ingredients (add a bit more powdered sugar and/or cocoa if it needs to be a bit thicker, but remember it will set up as it cools)
- Spoon into candy molds
- Freeze for five to ten minutes - until firm
- Wrap in pieces of wax paper and store in the freezer or refrigerator
- Enjoy!!!!
I have to say, this is some of they most enjoyable chocolate I've ever had!!!! Keep in mind, it melts quickly and does get all over little hands and faces! You may want to do as I'm doing and make them in small candy molds so they are bite-size . . . this should cut down on the possibility of ending up with chocolate everywhere!
