Tomorrow - July 23rd - is Vanilla Ice Cream Day, So Make Lemonade Pie!

Yes, tomorrow is Vanilla Ice Cream Day, and while you could certainly enjoy a bowl of vanilla ice cream - possibly topped however you most enjoy - you could also use this day to make Lemonade Pie! You will learn more about vanilla ice cream at this link, but I thought I'd share a few fun facts as well - did you know . . . 

  • Thomas Jefferson, during his tenure as American minister to France in the 1780s, encountered vanilla ice cream and brought the recipe back to the United States. His handwritten recipe is preserved in the Library of Congress.
  • C.C. Brown’s, an ice cream parlor in Hollywood, claimed to have invented the hot fudge sundae. Their version featured vanilla ice cream topped with hot fudge, becoming a favorite among celebrities.
  • The late 19th-century invention of the hand-cranked ice cream freezer made vanilla ice cream more accessible, solidifying its status as a popular treat.
  • The term "French Vanilla" refers to ice cream made with egg yolks, a technique used in France. 
  • It takes 12 pounds of milk to produce just 1 gallon of ice cream
  • The average number of licks to finish a scoop of ice cream is 50

I enjoy making lemonade ice cream pie so, I thought Vanilla Ice Cream Day is a great day to share the recipe with you - 

Ingredients -
  • 1/2 gallon of vanilla ice cream - makes two pies
  • 2 small cans of frozen lemonade - the smallest cans you can find or use one 12 ounce can if you are making two pies.
  • 2 graham cracker pie crusts
  • Yellow food coloring - optional
  • 2 pints of whipping cream
Directions -
  • Allow ice cream to soften and thaw lemonade - do NOT add water to the lemonade, you will use it as a concentrate
  • Mix whipping cream in a large bowl until fluffy
  • Add softened ice cream and mix together
  • Add lemonade as concentrate - do NOT add water to the lemonade
  • Add a few drops of yellow food coloring
  • Spoon into pie crusts and freeze until ready to serve

This is a super easy pie to make - be sure to allow your grandchildren to help with the adding of ingredients, mixing, scooping into the pie crusts, and of course with the "tasting"! :^) I love this pie in the summer as it is cool, slightly tart and involves no baking, cooking, or heating in any way! You could also make this pie substituting frozen limeade for the lemonade and using green food coloring in place of the yellow food coloring or frozen orange concentrate (1/2 can for one pie).
