Bake Some Tasty Donuts!

Apparently yesterday was Donut Day - don't know how I missed it, but since baked donuts are delicious - and can be a lot of fun to make with the children you love, I thought I'd post about donuts today and share a tasty recipe, too! My grands enjoy baking, so I bought a set of silicone donut baking "pans", kept one, and sent the other two home with my grands so they are able to make some at home. 

So, you will find a truly wonderful, delicious recipe for chocolate coffee donuts at this link and I'm sharing a recipe for lemon donuts which I found from Sally's Baking at this link - I'm making it this weekend! And, I'm also making a lime jello mousse to put with the lemon donuts! Here is a simple recipe for lime mousse . . . 

Ingredients
  • 1 small box (3 oz or 4-serving size) Jell-O gelatin powder, any flavor
  • 1/2 cup boiling water
  • 1/2 cup cold water (or ice water)
  • 1 cup heavy whipping cream, chilled
  • Optional: 1-2 tablespoons powdered sugar (if a sweeter mousse is desired) 
Instructions
  1. Dissolve the Jell-O: In a medium bowl, add the Jell-O powder. Pour in the boiling water and whisk continuously until the Jell-O powder is completely dissolved (about 2 minutes).
  2. Cool the mixture: Stir in the cold water. Place the bowl in the refrigerator for about 10-15 minutes, or until the mixture has cooled to room temperature and is slightly thickened but not fully set or chunky.
  3. Whip the cream: In a separate, large, chilled bowl, use an electric mixer to whip the heavy cream (and powdered sugar, if using) until stiff peaks form. The cream should be very thick and hold its shape.
  4. Combine the mixtures: Slowly pour the cooled, liquid Jell-O mixture into the whipped cream while mixing on low speed, or gently fold it in with a spatula. Continue mixing until the two are fully combined into a fluffy, uniform mousse. Be careful not to overmix, which can deflate the airiness.
  5. Chill and set: Spoon the mousse mixture into individual serving cups or dessert dishes. Refrigerate for at least 2-4 hours, or until the mousse is fully set and firm.

And, if you bake your donuts the night before, then in the morning use your air fryer to warm them for a few minutes - the donuts end up being perfect! Enjoy!
