Apparently yesterday was Donut Day - don't know how I missed it, but since baked donuts are delicious - and can be a lot of fun to make with the children you love, I thought I'd post about donuts today and share a tasty recipe, too! My grands enjoy baking, so I bought a set of silicone donut baking "pans", kept one, and sent the other two home with my grands so they are able to make some at home.
So, you will find a truly wonderful, delicious recipe for chocolate coffee donuts at this link and I'm sharing a recipe for lemon donuts which I found from Sally's Baking at this link - I'm making it this weekend! And, I'm also making a lime jello mousse to put with the lemon donuts! Here is a simple recipe for lime mousse . . .
- 1 small box (3 oz or 4-serving size) Jell-O gelatin powder, any flavor
- 1/2 cup boiling water
- 1/2 cup cold water (or ice water)
- 1 cup heavy whipping cream, chilled
- Optional: 1-2 tablespoons powdered sugar (if a sweeter mousse is desired)
- Dissolve the Jell-O: In a medium bowl, add the Jell-O powder. Pour in the boiling water and whisk continuously until the Jell-O powder is completely dissolved (about 2 minutes).
- Cool the mixture: Stir in the cold water. Place the bowl in the refrigerator for about 10-15 minutes, or until the mixture has cooled to room temperature and is slightly thickened but not fully set or chunky.
- Whip the cream: In a separate, large, chilled bowl, use an electric mixer to whip the heavy cream (and powdered sugar, if using) until stiff peaks form. The cream should be very thick and hold its shape.
- Combine the mixtures: Slowly pour the cooled, liquid Jell-O mixture into the whipped cream while mixing on low speed, or gently fold it in with a spatula. Continue mixing until the two are fully combined into a fluffy, uniform mousse. Be careful not to overmix, which can deflate the airiness.
- Chill and set: Spoon the mousse mixture into individual serving cups or dessert dishes. Refrigerate for at least 2-4 hours, or until the mousse is fully set and firm.
And, if you bake your donuts the night before, then in the morning use your air fryer to warm them for a few minutes - the donuts end up being perfect! Enjoy!
