I live in the house my grandparents built - my dad was born in this house and when I was a child, I often was able to have a sleepover at my grandparent's and always loved when my grandma baked bread - when it came out of the oven I always got a fresh-from-the-oven slice of bread to enjoy! What could be better! Now I'm the grandma in this house and when my grands come over I often make bread for them!
Since today is National Homemade Bread day, I thought I'd share one more recipe with you - homemade potato, squash, oat bread - it is wonderfully tasty for sure!
If you would like to try this recipe with the people you love, this is it . . .
- 3 1/2 cups) bread flour
- 2 teaspoons instant yeast
- 1/2 cup oats
- 1/2 cup mashed potatoes, packed
- 1/2 cup mashed squash, packed
- 3 tablespoons room temperature butter
- 1 cup (8 ounces) lukewarm water
- Whisk together the flour, yeast, salt, and oats.
- Add the potatoes and squash to the bowl of a stand mixer and mix in the butter. Add the dry ingredients and the water, and mix on low with the dough hook until combined, about three minutes.
- Knead the dough on the second speed for about six minutes. The dough should be smooth and elastic.
- Place the dough into an oiled bowl, cover, and let rise until doubled, about an hour. Turn the dough out onto a floured surface, and shape into log. Place the shaped loaf into a greased bread pan. Cover and let rise for 30 minutes. Preheat the oven to 425 degrees.
- Bake for about 25 to 30 minutes, until the internal temperature reaches about 195 degrees, and the bottom of the loaf sounds hollow when tapped. Transfer to a wire rack and cool completely.
