just for fun - No-Bake Berry Pie!

 

Yesterday was my amazing husband's birthday. For many years I made him a no-bake cherry cream cheese pie or peanut butter pie for his birthday - this year I made coffee ice cream (you will find my recipe for this very tasty ice cream at this link.) Since it is very hot out, I thought it might be nice to share a no-bake pie recipe with you, so today I'm sharing the simple recipe I use for cherry cream cheese pie with you which you may top with any berry you like - cherry, blueberry, raspberry, strawberry - whatever you like. Yes, I know, the berry pie we typically think of is a baked, traditional pie, but in case you have a craving for a berry pie, but are looking for something just a bit less traditional, especially when it is so hot out -check this recipe . . . 

Ingredients -
  • Graham cracker pie crust
  • One carton whipping cream
  • 1/4 cup sugar
  • 1/2 box cream cheese or one 8oz tub of whipped cream cheese
  • One can of berry pie filling of your choice - I always use the "lite" low-sugar type.
Directions -
  • Beat cream cheese until fluffy
  • Beat whipping cream and sugar with electric mixer until fluffy
  • Combine cheese and whipping cream
  • Spread in pie crust
  • Top with berries
  • Refrigerate until ready to eat - at least a couple hours
  • Enjoy!
This recipe is quick, easy and oh, so tasty! Plus, it is a great recipe for your grandchildren to make with you! Since it only uses 1/2 box of cream cheese, have them make an extra pie which you then take to a shut-in or teacher or pastor or neighbor to brighten their day!
