Thoughts From a "Lost Canadian" About Canadian Thanksgiving - and Making Maple Fudge!

In Canada, since they have their harvest earlier than we do - due to them being farther North, Thanksgiving is celebrated on the second Monday of October - which is this coming Monday. I've been learning about my Canadian ancestors and discovered they were sugarmakers, so in preparation for my first Canadian Thanksgiving, I made maple fudge yesterday.

This fudge has only three ingredients - real maple syrup (and happily, my real maple syrup is from Canada!), heavy cream, and butter. It is easy to make fudge, but does take time and attention.

First, you measure 2 1/4 cups of real maple syrup into your pot, then bring it to a boil. Watch carefully, as it will boil over if you are not paying attention. Then reduce heat and let simmer for five minutes.

Add one cup of heavy cream - do NOT stir. Bring back to a boil, then reduce heat and simmer until it reaches 236 on the candy thermometer. This step took about an hour - and I kept an eye on it so it didn't boil over.

Once it reaches 236 degrees, remove from the heat and add three tablespoons of butter - do NOT stir. Let sit for eight minutes.
