Today is National Ice Cream Pie Day!

One way we build a strong family is by celebrating together. Clearly this means we celebrate birthdays (and give gifts generously!), Christmas, Thanksgiving, and other holidays - in person, or using tech to connect virtually if distance keeps us apart. These celebrations help us build strong connections and are important.

But, there are many reasons we are able to celebrate with the ones we love - nearly every day has a "holiday", so we are always able to find something to celebrate - and build those connections even stronger! Today, for example, has a very wonderful - and tasty - holiday which you could celebrate with the ones you love - it is National Ice Cream Pie Day! Hooray!

You will find lots of info about National Ice Cream Pie Day at this link, but clearly the best way to celebrate this wonderful holiday is by enjoying ice cream pie with the ones you love! Happily it is quick and easy to make ice cream pie - you can use any ice cream of your choice, place in a graham cracker crust, top with whipped cream and you have ice cream pie!

I am sharing with you my favorite ice cream pie recipe - Lemonade Ice Cream Pie - what could be better? It combines the tartness of lemons with the sweet, creaminess of ice cream! Enjoy . . .

  • graham cracker pie crust
  • small frozen lemonade concentrate - do NOT thaw or add water.
  • 1/2 gallon of vanilla ice cream
  • 1 cup of heavy cream
  • Whipping cream
Directions -
  • Allow ice cream to soften a bit
  • Add unthawed lemonade concentrate and mix together
  • Whip heavy cream and fold into ice cream/lemonade mix
  • Put into graham cracker crust and freeze until ready to enjoy
  • Top with whipping cream - this is a pie everyone will love!
So, on National ice Cream Pie Day make - or buy, an ice cream pie and celebrate with the ones you love!
