Cookies!

My grandsons enjoy cookies - one of their favorites is chocolate chip, peanut butter cookies, so today I'm sharing my recipe with you.

My cookie recipe . . .
  • 1 stick of softened butter
  • 1/2 cup peanut butter
  • 2/3 cup packed brown sugar
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
Cream all ingredients together - mix until fluffy!
  • 2 1/4 cup flour
  • 1 cup semi-sweet chocolate chips
Add to creamed mixture then drop by the spoonful onto ungreased pan. Bake at 375 degrees for seven or eight minutes (my family prefers soft cookies). Cool on a rack and enjoy!

I live in West Michigan - apple country! We have apples, lots of apples at roadside stands and in the stores, so of course I have apples at home! I found this recipe on-line for applesauce cookies and thought I'd share it with you, too.

Ingredients
  • 1/2 cup butter 
  • 1 cup brown sugar 
  • 1 egg
  • 2 cups cake flour 
  • 1 1/2 teaspoon baking powder 
  • 1/4 teaspoon baking soda 
  • 3/4 teaspoon cinnamon 
  • 1 teaspoon salt
  • 1 cup thick unsweetened applesauce 
  • HOMEMADE APPLESAUCE
  • 4 medium apples peeled cored and chopped
  • 2 tablespoons water 
  • 1 teaspoon lemon juice 
  • 1 tablespoon sugar 
Instructions
  1. Pre-heat oven to 400°, line 2 cookie sheets with parchment paper.
  2. Sift cake flour, baking powder, baking soda, cinnamon and salt into a large bowl.
  3. In a medium bowl cream together butter and brown sugar add egg blend about 2 minutes, add sifted dry ingredients alternately with the applesauce, combine until just combined. Drop batter by spoonfuls (about the size of a golf ball) on prepared cookie sheets, bake for approximately 10-12 minutes until lightly golden. Keep in cool dry place, best if let to sit for 1 day before eating. (If you can wait) Enjoy!
