It is National Homemade Soup Day

Last month was National Soup Month, but today - February 4, 2025, is National Homemade Soup Day, so I thought I'd share a recipe for a creamy potato soup which will put a smile on the face of any who eat it! So, gather the ingredients (you probably have them already), invite some family and/or friends, and get your soup going . . . it will be a tasty meal for sure!

Ingredients -

  • Potatoes
  • Onion
  • Olive Oil
  • Canned Evaporated Milk
  • Salt/Pepper/Garlic
  • Shredded Cheddar
  • Ham
Directions -
  • Dice onion and sauté in a pot with some oil.
  • Cube potatoes into bite-sized pieces and put in your pot.
  • Season with salt, pepper, garlic.
  • Cover with water so potatoes are just covered.
  • Cook until soft.
  • While cooking, dice ham.
  • When potatoes are cooked, add ham, season to taste.
  • Add canned milk.
  • Add shredded cheddar.
  • Enjoy!
This is an easy soup to make and one which will be enjoyed for sure!

I thought I'd also share some fun facts about Chicken Noodle Soup - did you know . . .
  • Chicken soup dates back 7,000 to 10,00 years ago.
  • It was first introduced as ‘noodle soup with chicken’ back in 1934 by the American company, Campbell’s.
  • Five years after Campbell’s released ‘noodle soup with chicken’ the host of a radio channel mispronounced it by mistake, saying, ‘chicken noodle soup.’
  • The most expensive bowl of soup goes for about $190.
  • Even though this dish is mainly liquid, the verb used to define its consumption is ‘eat’ and not ‘drink’ as we use a spoon to consume it.
