Mocha Chiffon Pie

Yesterday was National Homemade Pie Day and since my family came over for supper, and I wrote about this tasty day earlier, I decided I should make a homemade pie. I thought about the ingredients I had in my house and settled on making a Mocha Chiffon Pie - and of course, I'm sharing the recipe with you!

Ingredients - 

  • Cream cheese: 4 ounces (half of an 8 oz block), softened to room temperature
  • Pudding mix: 1 small box (3.4 oz) chocolate instant pudding mix
  • Mocha Cappuccino powder - 3 Tablespoons
  • Heavy cream: 2 cups cold heavy whipping cream (divided: 1 cup for pudding, 1 cup for whipping)
  • Crust: 1 ready-made graham cracker or chocolate cookie crust or use the recipe below for a butter cookie tart crust.

Instructions -

  • Beat cream cheese: Whip the 4 oz of softened cream cheese in a large bowl with an electric mixer until smooth and fluffy.
  • Make chocolate base: Add the chocolate instant pudding mix, mocha cappuccino powder, and 1 cup of cold heavy cream to the cream cheese. Beat on medium speed for 2 minutes until very thick and smooth.
  • Add remaining cream: Slowly add 1 cup of heavy cream to the chocolate mixture until light and fluffy. Spread the mousse evenly into your pie crust.
  • Chill and serve: Refrigerate the pie for at least 2 to 4 hours until fully set before slicing.
  • Top with spray whipping cream if you like.

Ingredients for butter-cookie tart crust -

  • 1 and 1/2 cups gluten-free 1-to-1 baking flour (ensure it contains xanthan gum)
  • 1/4 cups powdered sugar
  • 1/2 tsp kosher salt
  • 1/2 cups cold unsalted butter, cut into small pieces
  • 1 large egg

Instructions -

  • Preheat your oven to 375°F (190°C).
  • Mix the gluten-free flour, powdered sugar, and salt together.
  • Add the cold butter pieces and mix until the texture is crumbly.
  • Add the egg and mix until a dough ball forms.
  • Press the dough evenly into your 9-inch pie or tart pan and up the sides.
  • Bake for 12 to 15 minutes until lightly golden if pre-baking, or add filling and bake according to your specific pie recipe.
I found these recipes online, but "tweaked" them a bit by adding the mocha cappuccino powder and putting them in a butter cookie tart crust.
